Mocha Cake Ingredients
- 3oz unsweetened chocolate
- 1 tsp Instant Adventure mixed with 4oz of water
- 2/3 c. packed brown sugar
- 5 tbsp butter, softened
- 2/3 c. granulated sugar
- 2 large eggs
- 1.5 c. white flour, sifted
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 cup milk
- 2 teaspoon coffee liqueur
Mocha Icing Ingredients:
- 1oz semisweet chocolate
- 1 tsp Instant Adventure mixed with 2 tbsp water
- 1 tbsp coffee liqueur
- 3 tbsp butter
- 1.5 c. powdered sugar, sifted
Mocha Cake Instructions:
Grease two 8-inch cake pans and dust with flour. Preheat oven to 350°.
In the top of a double boiler, melt the chocolate with the coffee and brown sugar. Cool & add liqueur.
With an electric mixer, combine the butter, granulated sugar, beating until light. Beat in eggs, then the chocolate mixture. Add dry ingredients to the batter gradually, alternating milk, until batter is smooth.
Pour batter into the cake pans and bake on middle rack for 15-20 minutes, until a toothpick comes out clean. Remove from oven and cool before removing from pan.
Mocha Icing Instructions:
In the top of a double boiler, melt the chocolate with the coffee, stirring frequently, never allowing the water underneath to boil. Cool, then add liqueur and powdered sugar, whipping until smooth.
Spread 1/2 cup icing over the top of the base layer, top with the second cake layer and spread the remaining icing over both layers. Can garnish with chocolate shavings or coffee beans.
